Greek Stuffed Peppers

In Greece, especially during the summer months, one of the most popular dishes is stuffed peppers aka γεμιστά aka γεμιστές πιπεριές. It’s a quick and easy dish, that takes no more than 50 minutes to make. It’s also healthy, tasty, and very light. Whilst especially popular during summer, it’s a great dish all year round. Serve Greek stuffed peppers (Γεμιστά) with salad or with vegetables such as potatoes.

  • Serves: 4 (assuming 2 peppers per serving)

  • Equipment: oven, oven proof dish, spatula, sharp vegetable knife
  • Olive oil
  • 8 large sweet peppers (such as bell peppers)
  • 8 large tablespoonfuls of rice (white or brown, according personal preference)
  • 1/2 bunch of fresh parsley (add more or less if desired).
  • 1 onion (chopped)
  • Salt and pepper to season (according to personal taste)
  • 1 can of chopped tomatoes 
  1. Preheat an oven to 170 °C (you may require a slightly different temperature setting, depending on the appliance you are using).
  2. Prepare the peppers, by cutting off the top and scooping out the seeds from inside. Do not discard the top.
  3. Make the filling, by adding the onion, tomato, rice, parsley, and seasoning to a large mixing bowl, drizzling with a little olive oil, and mixing together.
  4. Spoon the mixture into the peppers and replace the top to cover.
  5. Place the peppers in a suitable oven proof dish, adding a cup of plain water and a further drizzle of olive oil to the dish.
  6. Place the dish in the preheated oven and cook at 170 °C for approximately 40 minutes (you may require slightly different time and temperature settings, depending on the appliance you are using).
  7. When ready, remove from the oven and serve.
