For those needing a bit of inspiration this Veganuary, just consider the vegan ultramarathon runner Ariel Rosenfeld who has just set a new Israeli national record by covering 228 km (142 miles) in a new 24-hour event. The distance record for 24-hours was previously under 200km.

‘Race was great’ 

The sportsman explained that with an event like this it was important to stick to a plan which included maintaining a steady heart rate and pace, and using a mix of walking and running. He prepared well, trained hard, and practiced his race plan.

Ariel became vegan for ethical reasons although he has found that plant-based nutrition has helped him to perform well in extreme endurance events. Vegan ultramarathon runners are becoming more common as athletes are increasingly realizing the benefits of a plant-based diet.
